Charcoal
Use premium charcoal, preferably large size, as it allows for precise temperature control.
Never use briquettes, they produce constant embers and do not allow for temperature control.



Smoking wood
There are 3 types of smoking wood: sawdust, chips or chunks.
The essence of the trees will change the taste of the food.
Cleaning
To clean your Kamado, simply raise the temperature to 300°C or higher for 30 minutes with the lid closed.

Clean the exterior and interior regularly: Clean the exterior of your Japanese Kamado with a soft cloth and mild soap. To clean the interior, use a soft-bristled brush to remove ash and debris, then wipe it with a damp cloth.
